Your bamboo can be saved so long as the actual stalks are not rotting. I have had the same issue with some stalks I have had for over seven years, I believe the smell is coming from some roots that died with in the mass. With my lucky bamboo I pruned the roots way back nearly to the main stalk, they will recover pretty fast. On occasion I will take the stalks out and run water through the roots for a few minutes.
